Make a delicious cake following a few easy steps


I created this recipe for the application connected  with Zumbo’s Just Desserts. When the marketing department of Channel 7 asked me to create easy recipes for kids I remembered that carrot cake straight away.

 This recipe is the traditional carrot cake in Brazil. The icing is chocolate, unlike he14620071_1457122720971821_765648834_nre where usually the carrot cake has cream cheese frosting.Anyway, what does matter is that this cake recipe is very easy to make and soft to eat.

If you have a birthday party or a picnic coming up and you need to bake something delicious and quick this is the way to go. Baking a cake in a smaller portion it’s quick and easy and you don’t have to worry about portions, plates etc etc.

And you can always take the toppings with you and let the kids decorate their own. How much fun is that?


Make: 40x 5 cm mini cupcakes


Carrot cake:

3                      eggs

4                      medium carrots (peeled)

1cup               vegetable oil

1cup               caster sugar

2 cups             Plain flour

2 tsp      baking powder


Chocolate topping

150g               chocolate drops

100g               pure cream



Carrot cake:

1. Pre heat oven 180C.

2. Place eggs, carrots, oil and sugar in a blender and mix till paste consistency.

3. Sift dries and mix with the paste.

4. Place mix in muffin paper inside muffin tray and bake for 15/20 minutes or till skewer come clean.

5. Let it cool on a cake cooling rack.


Chocolate topping:

1. Place both ingredients in a bowl and microwave for 1 minute. Stir.

2. Warm for another 1 minute and stir.

3. An extra minute might be request until the chocolate be melted and combine with cream forming a thick ganash consistency.

4. Cover the bowl with climb wrap and let it cool at room temperature for at least an hour.

5. Using a teaspoon pour some topping on top of the cupcake and use your favorite sprinkle to make it looks fun.
